UNAIR Students Create Tool to Improve Quality of Clam Processing

UNAIR NEWS “ A combination of students from three faculties at 51¶¯Âþ offer a solution for clam fishermen at Banjarkemuning, Sedati sub-district, Sidoarjo regency, with the modification Autoclave and boilers (steam system).These tools will be able to eliminate the contamination of pollutants contained in the clams, because boiling water is not used twice, and the boiling process is closed so that the previous problem can be solved.

After the tool was successfully disseminated, five students of Student Creativity Program in Technology (PKMT) team wrote in the proposal themed“B-Steam:Bivalve Steaming,Right Solution of Clam Fisherman.”Under the direction of Kustiawan Tri Pursetyo, S.Pi. , M.Vet., the proposal passed Kemenristekdikti selection and entitled to development fund in the 2018 PKM program.

The five students are Ula Zidni Alfian Ikromah and Maulida Agustina (Faculty of Fisheries and Marine), Akhmad Afifudin Al-Anshori (Faculty of Veterinary Medicine), also Hilmi Putra Pradana and Ningsih Putri Herman (Faculty of Science and Technology).The PKMT team also received assistance from partners, KUB Abata, led by Agus and Nuryati.

Ula Zidni Alfian Ikromah, the head of this team explained that the clam fishermen’s center in the village is known to have partnerships, and there are problems that have not been solved.The tool is expected to solve the problem.

“Besides, KUB Abata as partners can work together well, by giving information about existing problems, as well as therelatedfeedbackthat we give.Moreover, KUB Abata has only been established for about a year, so to promote KUB both material and non-material are needed, “said Ula Zidni.

The processing of clams by the villagers of Banjarkemuning and surrounding areas is still using conventional way.As a result, pollutants are still accumulating on clams.Then due to repeated use of boiling water and it is usually opened, the heat cannot be suppressed.The processing area is also less hygiene.

The problem is very important to be dealt with, because it can affect the quality of clam produced.It affects the demand for clam production in the future, and some people are still reluctant to consume this marine commodity because of its nature as filter filder(absorbed food in water).

“With the poor processing, the consumers are worried.Therefore, although it is not known yet what health disorders caused by this conventional processing, it is better to preventfoodbornediseasesfrom happening (foodpoisoning), “said Ula Zidni.

Tool Mechanism

The PKMT team also explains how theAutoclaveÌý²¹²Ô»åÌýBoilermodifications(steam system) work.The boiler is used as a place where the water is heated until steam is channeled to theautoclavepartwhich contains the clams.This tool uses pressure and temperature as a boiling parameter.

To use the tool, first, theautoclavepart isopened by removing the nut.Then the basket inside can be pulled out and and the clams can be inserted up to 75% of the cart volume.The basket is inserted again, then closed and clasped again by fastening the nut.

The first boiler is filled with water up to three quarters of the pipe height.When water and clams have been inserted, the stove under the boiler is switched on. Ensure that the channel from the boiler to theautoclave isclosed so that the hot steam does not come out.Then raise the pressure on the boiler.The heat of the fire makes the water evaporate so that the pressure on the boiler also increases.

The pressure is indicated by the indicator on the boiler.The pressure on the boiler should not touch the maximum and minimum limits.After reaching the desired pressure value, the boiler channel to theautoclave isopened to drain the steam heat from the boiler to theautoclaveto heat the clam in it.

“Wait about 10 minutes with a small fire.Then turn the tap on theautoclaveÌý²¹²Ô»åÌýboilerslowly, so that the steam from both will come out slowly.In theautoclavewe can see the temperature indicator, both the temperature of boiling water and when the temperature decreases, clams can be removed from the basket first removing the couplers in theautoclave.

The UNAIR PKMT team has only a few obstacles, such as the difficulty to move the tool as it is very heavy.

“In the future, our PKMT team hopes this tool can be useful to improve the production process of clam steaming, so with good processing good product quality with better selling value can be acquired,” added Maulida Agustina, team member.

The UNAIR PKMT team will also file patents for this innovative work, including scientific articles in accredited journals.New partnership cooperation is also expected to develop together with the KUB cadres and fishermen more broadly, for example increasing the capacity of the tool capacity so as to produce a larger volume.(*)
